This dried chile is one of maxico's most highly regarded chiles,along with the ancho and mulato chiles.The pasilla is also called chile negro.In its fresh form it is known as the chilaka. It turns from dark green to purpled dark brown as it ripens. They are used in tomales and quesadillas,and can be interchanged with the poblamo in many instances.In spanish,pasilla means little raisin,and this pepper is so named because of its deep black colour and raisin like aroma.It is mild with a smoket flavour.
